Buffalo Medallions Recipe

Ingredients
- 4 x 2 ounce. buffalo medallions Cut from tenderloin
- 1 Tbsp. Butter
- 1 x Jigger Jack Daniel's whiskey
- 1/4 c. Reduced veal stock
- 2 tsp Heavy cream Salt & pepper to taste
Directions

1In small skillet, heat butter till light brown.

2Reduce heat and saute/fry medallions on both sides for 3-4 min or possibly till done to your taste.

3Place medallions on preheated plate.

4Throw away butter.

5Place skillet back on heat and deglaze with Jack Daniels.

6Immediately add in veal stock and reduce to half over medium heat.

7Add in cream, stir well and season to taste.

8Spoon sauce on plate and top with medallions.
