- 2 Tbsp. canola oil
- 2 garlic cloves, sliced
- 1 lb. cubed buffalo stew meat
- 1 medium onion, chopped
- 2 (4 oz.) mushroom buttons
- 1 to 1 1/4 c. nonfat sour cream
- 12 pitted ripe olives, sliced into rings
- 1 (10 3/4 oz.) can reduced salt condensed tomato soup
Directions

1In large skillet, saute garlic, meat and onion in canola oil. Add mushrooms, including juice; simmer 10 minutes.

2Add olives; simmer 10 minutes.

3Add tomato soup, stir and heat through.

4Add sour cream; stir and heat through.

5Serve over noodles or rice. Sprinkle with grated Parmesan cheese.

6Accompany with cold borscht, tossed green salad and garlic bread.
