Buffalo-Style Turkey Chili

- 2 tablespoons vegetable oil
- 1 lb lean ground turkey
- 1 (15 ounce) can black beans, undrained
- 1 (15 ounce) can pinto beans, undrained
- 1 (8 ounce) can tomato sauce
- 1/2 cup hot sauce (a buffalo-style sauce like Frank's or Louisiana)
- 1 onion, chopped
- 1 -2 serrano pepper, chopped
- 2 -3 garlic cloves, crushed
- 3 celery ribs, chopped
- 3 carrots, peeled and sliced
- 3 -4 tomatoes, diced
- 1 cup vegetable stock
- 1 tablespoon chili powder
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 4 ounces blue cheese, crumbled
Directions

1Heat oil in a dutch oven over medium-high heat. Brown ground meat for about 8-10 minutes, or until almost crispy and dry.

2Add all other ingredients to the pot, except for the blue cheese. Be sure to add the can liquid from the beans as well.

3Stir, bring to a boil, then lower heat and simmer for 2-3 hours. Stir every every 15 minutes or so.

4Serve in bowls topped with crumbled blue cheese.
