Bulgar Salad

Ingredients

  • 4 C Garbanzos
  • 4 C water +
  • 1/4 tsp Salt
  • Pepper
  • 2 C Bulgar wheat
  • 4 tbs Olive oil
  • 1 1/2 C red onion, chopped
  • 4 cloves garlic, minced
  • 2 tbs grated ginger
  • 2 tomatoes chopped
  • 2 tsp + cumin
  • 1 tsp + coriander
  • 1/4 tsp cayenne pepper
  • 1/2 tsp turmeric
  • 4 minced green onions
  • 1 cup parsley
  • 2/3 c cilantro
  • 1/2 c lime juice

Directions

    Combine oil, onion, ginger and garlic in skillet. Saute for 5 min.

    Add tomatoes and let evaporate. Add spices and cook for 1 min

    Add garbanzos, bulgar and water, simmer until water evaporates.

    Remove from heat

    Add lime, green onion, parsley and cilantro.
