Ingredients

  • 2 Tablespoons Vegetable Oil
  • 1 whole Small Onion, Diced
  • 1/2 whole Green Bell Pepper, Diced
  • 1 whole Jalapeno, Seeded And Finely Diced
  • 2 cloves Garlic, Minced
  • 1/2 cups Bulgur
  • 3/4 cups Water
  • 1 can (15 Oz. Size) Black Beans, Drained
  • 1 Tablespoon Chili Powder
  • 1- 1/2 Tablespoon Cumin
  • 1- 1/2 teaspoon Kosher Salt

Directions

    Heat oil over medium heat in a medium pot.

    Add onion, bell pepper, and jalapeno and saute until soft and onion is translucent.

    Add garlic and sautee until its just lightly browned.

    Add remaining ingredients.

    Stir, raise heat and bring to a boil.

    Then turn heat down to low.

    Simmer, covered, for 30 minutes, or until water is gone.

    Remove from heat and let sit for 10 minutes before serving.

    Serve topped with sour cream or inside a tortilla a la rice and beans.
