  • 1 Tbsp. butter
  • 1 1/2 lb. cubed lean beef
  • 2 onions, sliced
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 bay leaf
  • 1/4 tsp. thyme
  • 1 Tbsp. flour
  • 1 1/2 c. red wine
  • 2 Tbsp. chopped parsley
  • 2 slices carrots
  • 1/2 c. water

    Melt butter in heavy saucepan.

    Brown beef and onions.

    Blend in flour, salt and pepper.

    Add thyme, wine and water, stirring constantly, until mixture reaches the boiling point.

    Add parsley, carrots and bay leaf.

    Cover and cook over low heat for at least 2 hours or until tender.

    Add more water, if needed.

    Serve with rice.
