Ingredients

  • 2 whole Sweet Potatoes, Peeled And Cubed
  • 1 whole Medium Onion, Chopped
  • 5 ounces, weight Frozen Corn
  • 1 can (15 Oz. Size) Black Beans, Drained And Rinsed
  • 1 package Taco Seasoning, 1 Ounce Packet (or Whatever Spices Float Your Boat)
  • 1 Tablespoon Olive Oil
  • Optional Toppings (as Desired): Salsa, Sour Cream, Shredded Cheese, Lettuce, Etc

Directions

    Preheat your oven to 375 degrees F.

    Combine all your ingredients (except the toppings) in a baking dish, stirring to combine.

    Bake at 375 degrees F until the sweet potatoes are soft.

    Mine take 50-60 minutes generally, but the time will depend on how much you make and the size of your roasting pan.

    Once its done, spoon it into bowls and add your toppings!

    Optional toppings: Avocado Salsa Light Sour Cream Shredded Colby Jack Lettuce and Tomatoes
