- 1/4 cup butter
- 2 teaspoons olive oil
- 1 onions diced
- 1 2/3 pounds chicken thighs boneless, quartered
- 4 cloves garlic crushed
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground ginger
- 3 teaspoons garam masala
- 3/4 cup tomato puree
- 1/3 cup cream
- 2 teaspoons sugar
- 1/2 cup greek yogurt
- Handful cilanto, for garnish
- 1/4 cup pistachios roughly chopped, for garnish
- jasmine rice Steamed, to serve
- naan to serve
Directions

1Heat butter and oil in saucepan over medium-high heat. Add onion and cook for 5 mins. Add chicken and cook for 3 mins.

2Add garlic, chili powder, cumin, coriander, ginger and garam masala and stir to coat chicken with spices. Cook for 2 mins. Stir in tomato puree, cream and sugar and bring to a simmer, then reduce heat to medium-low and simmer gently for 10 mins, or until chicken is cooked through.

3Remove from heat and stir in yogurt. Season to taste. Spoon into serving bowls and garnish with cilantro and pistachios. Serve with rice and naan bread.
