Buttered Cabbage

- 2 lb. green cabbage
- 2 to 3 Tbsp. soft butter or margarine
- salt to taste
- pepper to taste
- 1 to 2 Tbsp. lemon juice or white wine vinegar, if desired
Directions

1Remove outside leaves of cabbage, wash cabbage and cut into wedges.

2Remove core and cut wedges crosswise into 1-inch slices. Heat 1-inch salted water (1/2 teaspoon salt for 1 cup water) to a boil.

3Add cabbage; cover and heat to a boil.

4Cook 5 to 10 minutes or until just crisp and tender.

5Drain.

6Stir in butter and lemon juice or white wine vinegar.

7Season with salt and pepper.

8Serves 4 to 6.
