- 1/2 cup (1 stick) unsalted butter
- 1 1/2 cups buttermilk
- 2 large eggs
- 2 cups yellow cornmeal
- 1 cup unbleached all purpose flour
- 1/2 cup sugar
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
Directions

1Preheat oven to 400F.

2Butter 13x9x2-inch metal baking pan.

3Melt butter in large saucepan over low heat.

4Remove from heat.

5Whisk in buttermilk, then eggs.

6Mix all remaining ingredients in large bowl.

7Stir in buttermilk mixture.

8Transfer to prepared pan.

9Bake corn bread until edges are lightly browned and tester inserted into center comes out clean, about 20 minutes.

10Cool completely in pan.

11If using in stuffing, cover tightly and store at room temperature at least 1 day and up to 2 days.
