- 1 1/2 c. buttermilk
- 5 Tbsp. butter or margarine, melted and cooled
- 2 large eggs
- 1 3/4 c. yellow corn meal
- 3/4 c. all-purpose flour
- 2 Tbsp. sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1 (15 oz.) can whole kernel corn, drained
Directions

1Preheat oven to 375°.

2Grease 9 x 5 metal loaf pan.

3In medium bowl, with fork, mix buttermilk, melted butter and eggs until blended.

4In large bowl, mix corn meal, flour, sugar, baking powder, salt and baking soda.

5With fork, stir buttermilk mixture and corn into corn meal mixture, just until blended.
