- 2 eggs
- 1 1/2 cups buttermilk
- 1/2 cup vegetable oil
- 1/2 cup applesauce
- 1/3 cup honey
- 2 teaspoons salt
- 1 cup cornmeal
- 2 1/2 cups flour (may use a combination of white and wheat)
- 4 teaspoons baking powder
- 1 teaspoon baking soda
Directions

1Combine dry ingredients and set aside.

2Mix eggs, buttermilk oil, applesauce, and honey.

3Gently fold in dry ingredients, mix just until blended.

4Batter will be lumpy.

5Pour into greased 9x13 pan.

6Bake at 400 degrees for about 20 minutes or until lightly browned.

7Also makes 12 muffins, if desired.
