Buttermilk Pound Cake

  • 1 c. vegetable shortening
  • 2 3/4 c. sugar
  • 1 1/2 tsp. vanilla or lemon extract (I use 3/4 tsp. of each, almond is good too)
  • 6 eggs
  • 3 c. all-purpose flour
  • 1/4 tsp. salt
  • 1/4 tsp. soda
  • 1/4 tsp. baking powder
  • 1 c. buttermilk

    Cream shortening and sugar.

    Add flavoring.

    Add eggs, one at a time, beating well after each addition.

    Sift dry ingredients together and add to creamed mixture alternately with buttermilk. Spoon batter into greased 10-inch tube pan and bake at 325° for 1 1/4 hours or until cake tests done.
