  • 12 Tbsp. butter
  • 2/3 c. sugar
  • 1 large egg
  • 1/2 tsp. vanilla
  • 1/2 tsp. peppermint extract
  • 2 c. flour, sifted
  • 1 Tbsp. minced peppermint leaves

Directions

    Cream butter and sugar; beat in egg and extract.

    Gradually add flour; stir in peppermint.

    Dough will be soft.

    Divide dough into three parts.

    Shape into plastic wrap into 1 1/4-inch diameter logs.

    Chill 1 to 2 hours.

    Slice into 1/4-inch rounds. Bake on ungreased cookie sheet at 350° for 10 minutes or until light golden brown.
