Butternut Squash Pie

  • 1 (9-inch) pie shell
  • 2/3 c. sugar (1/2 brown, 1/2 granulated)
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 1/2 c. thick squash, cooked and pureed
  • 3 eggs, slightly beaten
  • 1 1/2 c. evaporated milk

Directions

    Mix sugar and spices together.

    Mix into squash.

    Add eggs and milk.

    Pour into pie shell and bake at 450° for 15 minutes and 350° for 30 minutes.

    (Squash is better if steamed instead of cooked in water.)
