- 4 cups milk
- 8 egg yolks
- 23 cup brown sugar
- 18 teaspoon salt
- 4 teaspoons vanilla extract
- 12 cup heavy cream
- 14 cup Bourbon
- 2 tablespoons brandy
- 18 teaspoon freshly grated nutmeg
Directions

1heat the milk to a slow boil in a medium saucepan.

2in a large bowl, whisk the yolks and brown sugar until thick.

3whisking constantly, pour the milk into the egg mixture.

4whisk in the salt.

5return the mixture to the pot over medium heat.

6cook, stirring, constantly until thick enough to coat the back of teh spoon.

7strain into a bowl and cool to lukewarm before adding vanilla.

8beat the cream until soft peaks form and fold into custard.

9add brandy and bourbon.

10garnish with nutmeg.
