Buttery Dinner Rolls

  • 1 pkg. active dry yeast
  • 1/4 c. lukewarm water
  • 1/2 c. milk
  • 1/4 c. butter
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 2 eggs
  • 2 c. all-purpose flour
  • melted butter

Directions

    Soften yeast in water; let stand 5 minutes.

    Scald milk; stir in 1/4 cup butter, sugar and salt.

    Cool to lukewarm.

    Add unbeaten eggs, yeast and flour.

    Beat vigorously.

    Cover and let rise in warm place (80° to 85°) about 1 hour.

    Stir well and spoon into greased muffin pan cups, filling them about 1/2 full.

    Let rise in warm place until doubled in bulk (about 30 minutes).

    Pour 1/2 teaspoon melted butter over each roll; bake in preheated moderate oven (375°) for 20 minutes.
