- 4 medium carrots, coarsely grated
- 1/4 cup cider vinegar
- 1 teaspoon salt
- 1/2 teaspoon fresh ground black pepper
Directions

1Combine shredded cabbage and grated carrots in a large bowl.

3Cover with a damp towel and let sit in refrigerator for at least 1 hour or up to 8 hours.
