- 4 lb. roast
- 2 Tbsp. flour
- 2 tsp. salt
- 3 Tbsp. oil
- 1 (8 oz.) can tomato sauce
- 1 1/2 c. water
- 1 c. Cabernet wine
- 1/2 tsp. oregano
- 1/2 tsp. rosemary
Directions

1Dredge meat in flour and salt.

2Brown meat on all sides in oil.

3Pour in tomato sauce, water and wine.

4Add herbs.

5Cover and simmer gently for 3 hours in a 325° to 350° oven.

6Remove meat; thicken sauce for gravy.
