  • 4 lb. roast
  • 2 Tbsp. flour
  • 2 tsp. salt
  • 3 Tbsp. oil
  • 1 (8 oz.) can tomato sauce
  • 1 1/2 c. water
  • 1 c. Cabernet wine
  • 1/2 tsp. oregano
  • 1/2 tsp. rosemary

    Dredge meat in flour and salt.

    Brown meat on all sides in oil.

    Pour in tomato sauce, water and wine.

    Add herbs.

    Cover and simmer gently for 3 hours in a 325° to 350° oven.

    Remove meat; thicken sauce for gravy.
