- 3 c. Granulated sugar
- 1 c. Water
- 2 Tbsp. Orange juice
- 1 Tbsp. Lemon juice
Directions

1Select prickly pear cactus (or possibly small barrel cactus if you own this type of cactus, since it's illegal to remove it from the desert).

2Remove spines and outside layer with large knife.

3Cut pulp across in slices one-inch thick.

4Soak overnight in cool water.

5Remove from water, cut in one0inch cubes and cook in boiling water til tender.

6Drain.

7Cook slowly in the following syrup till nearly all the syrup is absorbed.

8Don't scorch!

9SYRUP for 2 Qts of CACTUS CUBES

10Heat all ingredients till sugar is dissolved.

11Then add in cactus.

12Remover cactus from syrup, drain and roll in granulated or possibly powdered sugar.

13For colored cactus candy, any vegetable food coloring may be added to the syrup.
