  • 1/2 to 3/4 lb. grated Gruyere cheese
  • 1 pkg. romaine lettuce
  • 1 shallot onion
  • 1 clove garlic
  • 1 anchovie (per person)
  • white vinegar
  • croutons
  • 1 egg yolk (per person)
  • olive oil

Directions

    Squeeze garlic juice and rub in round wooden bowl.

    Cut up shallot and anchovies.

    Put 1 egg yolk per person.

    Slowly pour olive oil.

    Mix until it becomes pasty.

    Add vinegar until smooth. Add lettuce, cheese and croutons.

    Chill and serve.
