Caesar Salad

Ingredients

  • 1 head romaine lettuce, washed, dried, torn into bite-size pieces
  • 1 clove garlic
  • 1 Tbs. anchovy paste or 1 2-oz. can anchovies in olive oil
  • 3/4 cup (3 ounces) grated Parmesan cheese
  • juice of 1 lemon
  • 1/2 tsp. white wine vinegar
  • 1 egg
  • 1/3 to 1/2 cup extra virgin olive oil

Directions

    Mash the garlic and anchovies w/ a pinch of salt to a fine paste at the bottom of a large wooden salad bowl.

    Whisk together with 1/2 cup of the cheese, lemon jiuce, vinegar and the egg.

    Whisk in the olive oil. If using can anchovies, include the olive oil from the can.

    Season to taste with fresh ground pepper.

    Add the torn up romaine lettuce pieces and toss until well coated.

    Arrange on 4 plates. Top w/ remaining cheese.

    I use fried extra small oysters in the place of croutons.
