Ingredients
- 2 -3 garlic cloves, minced
- salt and freshly ground pepper
- 4 anchovy fillets, mashed (optional)
- 6 tablespoons olive oil
- 1 12 tablespoons lemon juice
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 egg yolk, lightly beaten (or the equivalent amount egg substitute)
- 18-14 teaspoon hot sauce
- 1 -2 head romaine lettuce
- freshly grated parmesan cheese
- crouton (optional)
Directions

1Rub the side and bottom of a wooden salad bowl with the garlic.

2Sprinkle with salt and pepper.

3Combine the anchovies, olive oil, lemon juice, Worcestershire sauce, Dijon mustard, egg yolk, and hot sauce in the prepared salad bowl and mix well.

4Add the romaine and toss to coat.

5Sprinkle with cheese and pepper.

6Top with croutons.

7Serve immediately with Olive Sticks (see recipe).
