Ingredients

  • 2 -3 garlic cloves, minced
  • salt and freshly ground pepper
  • 4 anchovy fillets, mashed (optional)
  • 6 tablespoons olive oil
  • 1 12 tablespoons lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 egg yolk, lightly beaten (or the equivalent amount egg substitute)
  • 18-14 teaspoon hot sauce
  • 1 -2 head romaine lettuce
  • freshly grated parmesan cheese
  • crouton (optional)

Directions

    Rub the side and bottom of a wooden salad bowl with the garlic.

    Sprinkle with salt and pepper.

    Combine the anchovies, olive oil, lemon juice, Worcestershire sauce, Dijon mustard, egg yolk, and hot sauce in the prepared salad bowl and mix well.

    Add the romaine and toss to coat.

    Sprinkle with cheese and pepper.

    Top with croutons.

    Serve immediately with Olive Sticks (see recipe).
