- 2 medium size heads romaine lettuce
- 10 to 12 croutons
- 1 tsp. finely chopped garlic
- 1/8 tsp. salt
- 1/8 tsp. freshly ground pepper
- 1/2 c. olive oil
- 2 egg yolks
- 4 Tbsp. lemon juice
- 1 c. freshly grated Parmesan cheese
- 6 flat anchovies
Directions

1Separate the lettuce leaves and wash under cold running water. Dry each leaf thoroughly with paper towels.

7olive oil; toss. Break egg yolks on top of salad; add lemon juice and mix.
