Ingredients
- 1 1/2 lb. romaine lettuce
- 24 plain croutons
- 2 garlic cloves
- 6 Tbsp. olive oil
- 2 Tbsp. wine vinegar
- 1 Tbsp. fresh lemon juice
- 1 coddled egg (placed in very hot water 5 minutes)
- 4 Tbsp. Parmesan cheese
- 1 tsp. Worcestershire sauce
- 1 tsp. dry mustard
- 1 tsp. coarsely ground black pepper
- 1/2 tsp. salt
Directions

1Place garlic cloves, cut in half, in oil and let stand several hours.

2Near serving time, drizzle some garlic oil over croutons and toss lightly.

3Fifteen minutes before serving, place romaine lettuce broken into fat pieces in salad bowl.

4When ready to serve, remove garlic and drizzle oil over greens, then vinegar, lemon juice, Parmesan and seasonings.

5Break in coddled egg and roll-toss until every leaf is coated.

6Add croutons.

7Lightly toss and serve at once.
