- 1 cup buttermilk
- 1 teaspoon hot pepper sauce
- 1 pound catfish fillets
- 1 cup dry bread crumbs
- 1 tablespoon dried thyme, crushed
- 1 tablespoon dry mustard
- 1 tablespoon salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon black pepper
- 1/4 cup safflower or canola oil

4Place the fillets in the buttermilk mixture.

5In a shallow dish combine the bread crumbs, thyme, mustard, salt, garlic powder, onion powder, paprika, and pepper.

7Remove fish fillets from buttermilk mixture, letting the excess drip off.

8Dip the fish in the bread crumb mixture, pressing firmly onto fish.

9Arrange fish on the prepared baking sheet.

10Bake until firm, opaque, and coating begins to tum golden brown, about 10 minutes.
