- 1/4 cup sweet butter
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon thyme, crushed
- 1/4 teaspoon oregano, crushed
- 1/4 teaspoon cayenne
- 1/4 teaspoon fresh ground black pepper
- 4 skinless chicken breasts, pounded thin
Directions

1Melt butter in a small saucepan over low heat.

2Add lemon juice, herbs, black pepper and salt to taste.

3Continue to cook for several minutes on low heat till herbs soften.

4Heat a large cast-iron skillet to high.

5Coat both sides of the cutlets well with the butter mixture.

6Cook cutlets in cast iron for several minutes on each side.

7When done, the will be black on the outside and tender and juicy on the inside.
