  • pastry shell, baked 5 minutes at 450~
  • 1 1/2 c. grated Swiss cheese
  • 1 Tbsp. flour
  • 1/2 lb. bacon
  • 1 large onion, chopped
  • 3 eggs
  • 3/4 c. milk
  • 1/2 tsp. salt
  • generous dash of nutmeg

    Mix cheese and flour.

    Fry bacon until crisp, then drain and cut into small pieces.

    Beat eggs lightly; add milk and seasonings.

    Use 1 cup milk if the pastry shell is large.

    Pour into shell.

    Jiggle pan to settle liquid.

    Bake at 450° for 15 minutes.

    Reduce heat to 350° for 15 minutes longer or until custard sets.

    Cool 10 minutes before cutting.
