- pastry shell, baked 5 minutes at 450~
- 1 1/2 c. grated Swiss cheese
- 1 Tbsp. flour
- 1/2 lb. bacon
- 1 large onion, chopped
- 3 eggs
- 3/4 c. milk
- 1/2 tsp. salt
- generous dash of nutmeg
Directions

1Mix cheese and flour.

2Fry bacon until crisp, then drain and cut into small pieces.

3Beat eggs lightly; add milk and seasonings.

4Use 1 cup milk if the pastry shell is large.

5Pour into shell.

6Jiggle pan to settle liquid.

7Bake at 450° for 15 minutes.

8Reduce heat to 350° for 15 minutes longer or until custard sets.

9Cool 10 minutes before cutting.
