- 4 boneless chicken thighs, skinned and cut into cubes
- 1 onion, chopped
- 1/8 tsp. cayenne pepper
- 1 (15 oz.) can black-eyed peas, drained
- 1 (14 1/2 oz.) can chili style chunky tomatoes
- 1 green pepper, chopped
Directions

1In large skillet, lightly brown sausage over medium-high heat for 7 minutes.

2Add chicken, onion and cayenne; cook until browned.

4Stir in remaining ingredients. Cook over medium-high heat 5 minutes, stirring occasionally. Serve.
