  • 1 c. yellow cornmeal
  • 1 c. sifted flour
  • 1/4 c. sugar
  • 1/2 tsp. salt
  • 4 tsp. baking powder
  • 1 egg
  • 1 c. milk
  • 1/4 c. shortening, soft

    Sift together dry ingredients into bowl.

    Add egg, milk and shortening.

    Beat with eggbeater until smooth, about 1 minute.

    Do not overbeat.

    Bake in greased 8-inch square pan in hot oven (425°) for 20 to 25 minutes.
