- 4 cleaned ducks
- 1/4 c. bacon grease
- 1 tsp. pepper
- 1 onion, quartered
- 1 apple, quartered
- 4 chicken bouillon cubes
- 8 green onions, chopped
- cooked white rice
- 4 cloves garlic
- 1 tsp. salt
- 1/2 tsp. cayenne pepper
- 1 bell pepper, quartered
- 2 ribs celery, halved
- 1 c. sherry, divided in two
- 1 (4 oz.) can mushrooms
Directions

1Rub ducks with bacon grease.

2Season with salt and pepper. Stuff each with onion, bell pepper, apple, garlic clove and celery.

3Place ducks in a Dutch oven and cover with water.

4Add bouillon cubes and 1/2 cup sherry.

5Cook for 2 hours on medium heat.

6Take ducks out of pan.

7Add green onions, mushrooms and rest of sherry to drippings.

8Simmer 15 minutes.

9Split ducks. Serve over hot rice with sauce.
