Carrot Salad

Ingredients

  • 1 pkg. unflavored gelatin
  • 2 Tbsp. sugar
  • pinch of salt
  • 1/2 c. cold water
  • 1 large can crushed pineapple
  • 1 c. pineapple juice (add water if needed)
  • juice of 1 lemon
  • 1 c. slithered (grated) carrots

Directions

    Mix gelatin, sugar, salt and water.

    Warm just to melt gelatin.

    Put in mold and partially gel.

    Drain.

    Mix pineapple, carrots and juice.
  6. 6
    Fold this into the partially jelled mixture in mold.

    Put back in refrigerator until jelled again.
  8. 8
    Serve on lettuce.
