Cajun Quick Fix

Ingredients

  • 1 lb. boneless pork chops
  • 3 Tbsp. canola or vegetable oil
  • 1 (12 oz.) can Del Monte chili tomatoes
  • 1/2 to 3/4 sliced smoked sausage
  • 1 (16 oz.) pkg. frozen corn
  • 1/4 c. chopped celery
  • 1 Tbsp. chili powder
  • garlic salt and pepper to taste

Directions

    Slice pork chops into strips; brown in oil.

    Add chopped celery and frozen corn; simmer for about 3 minutes.

    Stir in can of tomatoes and seasonings.

    Simmer for about 15 to 20 minutes. To make it really Cajun style, I add 1/2 to 3/4 pound sliced smoked sausage.

    Serve over white rice.

    Serves 4 to 6.
