- 1 rump roast or similar lean cut
- 1 whole yellow onion
- 1 doz. cloves garlic or more
- Tabasco sauce
- salt and pepper
Directions

1Preparation:

2Tenderize the roast, using a fork (poking the heck out of it on both sides!).

3Generously apply Tabasco sauce, ground black pepper and salt.

4Preheat oven to 300°.

5Place roast in roaster and smother with minced garlic and chopped onion. (Should cover meat completely.)

6Cover tightly with foil and cook an hour per every pound of meat.

7Serve in its own au jus gravy over your favorite rice.
