- 4 to 5 sliced zucchini
- 2 small tomatoes, diced
- 1/2 c. chopped cilantro
- 1 c. shredded cheese
- 2 yellow chilies, sliced (optional)
- 2 c. water
- 1 small onion, chopped
- 1 garlic clove, diced
- 1 Tbsp. oil
- 1 (8 oz.) can tomato sauce
Directions

1Saute garlic and onions in oil; add zucchini and saute for about 10 minutes.

2Add tomatoes, chilies and tomato sauce.

3Add water and bring to a boil.

4Lower heat and add cilantro and cheese.

5Simmer for about 15 minutes until cheese is melted and zucchini is tender.
