- 3 shallots, chopped
- 2 bay leaves, crumbled
- 1-1/2 tsp salt
- 3/4 tsp allspice
- 3/4 tsp fresh ginger, crushed
- dash black pepper
- MEAT: 2 X 3/4 lb pork tenderloins
- SAUCE:
- 1-1/2 c orange juice
- 1/4 c shallots, minced
- 3 tbs brown sugar
- 2 tbs fresh ginger
- 2 bay leaves
- 3/8 tsp allspice
- dash ground black pepper
Directions

1Preheat to 450. Combine RUB ingredients and rub into pork loins. Roast abou 25 minutes until inside temp = 150. Meanwhile, combine sauce ingredients and simmer until slightly syruppy, about 10 minutes. Place cooked pork on serving platter and pour sauce on top.
