- 6 medium potatoes (red, preferably)
- 2 onions, thinly sliced
- 2 green peppers, thinly sliced
- 2 yellow (summer) squash, diced
- 1/2 lb. margarine
- Parmesan cheese (optional)
Directions

1Wash potatoes and slice.

2In large bowl toss potatoes, onions, peppers and squash.

3Arrange 6 sheets of aluminum foil.

4Place potato mixture in center of each sheet.

5Dot with pats of margarine; sprinkle with cheese.

6Seal foil around mixture.

7Place foil in hot coals or on top of grill.

8Cook approximately 40 minutes or until tender.
