  • 5 lb. (11 or 12 medium sized) yams
  • 2 c. sugar
  • 1/2 tsp. nutmeg
  • 1 c. pineapple juice
  • 1/4 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 c. butter

Directions

    Peel yams; cook until tender, not mushy (1/2-inch slices). Heat oven to 375°. Place in large 3-quart baking dish. Mix together remaining ingredients in heavy saucepan and bring to boil. Simmer 3 minutes. Pour over yams and bake 30 minutes, basting until well candied.
