Ingredients

  • 3 whole chicken breasts (six 1/2 breasts)
  • 2 bunches fresh asparagus
  • 2 cans cream of chicken soup
  • 1 c. mayonnaise
  • 1/2 tsp. curry powder
  • 1/4 tsp. each: chili powder, cumin and sage
  • 1 tsp. lemon or lime juice
  • 1 c. shredded Cheddar cheese
  • 1/2 c. jalapeno Monterey Jack cheese, shredded
  • 1/2 pkg. corn tortillas

Directions

    Cook chicken breasts one hour.

    Let cool.

    Cook bunches of asparagus and cut into bite-size pieces.

    Cut chicken and tortillas into bite-size pieces.

    Mix together soup, mayonnaise, seasonings and lemon juice.

    Mix two cheeses together.

    Layer in 9 x 13-inch casserole dish from the bottom to top:

    asparagus, chicken, tortilla, soup mixture, cheeses.

    Bake at 350° for 40 minutes.
