- 4 c. cantaloupe pulp
- 1/4 c. vinegar
- 2 c. sugar
- 1 tsp. cinnamon
- 1/4 tsp. allspice
- 1/4 tsp. ground cloves
Directions

1Select slightly green cantaloupes.

2Pare; cut into 1-inch strips or cubes.

3Allow to soak in salt water solution for 2 to 3 hours.

4Weigh down with plate; drain.

5Bring sugar, vinegar, water and spices to a boil, then add melon.

6Cook until transparent. Pour into hot, sterilized jars and seal.

7Yields 3 pints.
