  • 4 c. cantaloupe pulp
  • 1/4 c. vinegar
  • 2 c. sugar
  • 1 tsp. cinnamon
  • 1/4 tsp. allspice
  • 1/4 tsp. ground cloves

    Select slightly green cantaloupes.

    Pare; cut into 1-inch strips or cubes.

    Allow to soak in salt water solution for 2 to 3 hours.

    Weigh down with plate; drain.

    Bring sugar, vinegar, water and spices to a boil, then add melon.

    Cook until transparent. Pour into hot, sterilized jars and seal.

    Yields 3 pints.
