  • 1 baguette (400 g), cut into 36 slices
  • 2 Tbsp. extra virgin olive oil
  • 9 bocconcini (1/2 lb./225 g), 1-1/2 inch balls
  • 1 jar (380 mL) Classico Bruschetta di Sorrento Extra Garlic
  • 1 Tbsp. capers
  • 1 tsp. balsamic vinegar
  • 36 small fresh basil leaves

    Heat oven to 425 degrees F.

    Brush both sides of bread slices with oil; place in single layer on baking sheet.

    Bake 4 to 5 min.

    on each side or until toasted on both sides.

    Meanwhile, cut each bocconcini into 4 slices; set aside.

    Combine bruschetta, capers and vinegar.

    Top toast slices with basil, bocconcini and bruschetta mixture.
