- 2 None eggs
- 3/4 cup brown sugar
- 1 tsp vanilla extract
- 1/2 cup self-rising flour, sifted
- 1/2 cup butter, melted, cooled
- 2 None apples, 1 cored, finely chopped, 1 sliced into 1/4 inch rounds
- 3/4 cup granulated sugar
- 1/4 cup heavy cream
- None None whipped cream, to serve
Directions

1Preheat oven to 350°F. Lightly grease a 6-cup muffin pan. Whisk eggs, brown sugar and vanilla together until pale and creamy. Add flour and butter. Fold in chopped apple. Transfer to prepared pan. Place 1 apple slice on top of each pudding and bake for 20-25 mins. Let cool in pan for 5 mins.

2Meanwhile, to make caramel, combine sugar and 1/3 cup water. Stir over low heat until sugar dissolves. Increase heat to medium and simmer, without stirring, for 8-10 mins, until pale golden brown. Gradually add cream.

3Remove puddings from pan. Spoon sauce over top and serve with whipped cream.
