  • 390 g black beans
  • 1 12 cups frozen corn, defrosted
  • 12 cup green onion, chopped
  • 1 jalapeno pepper, chopped, not seeded
  • 3 plum tomatoes, seeded and chopped
  • 1 avocado, peeled, seeded, and cut into chunks
  • 12 cup cilantro, chopped
  • 14 cup basil, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 12 teaspoon sugar (to taste)
  • salt and pepper

Directions

    In a large bowl, combine the beans, corn, onions, jalapeno chili peppers, tomatoes, avocado, cilantro, basil, lime juice and olive oil.

    Add sugar and salt and pepper to taste.

    (The sugar will help balance the acidity from the tomatoes and lime juice.)
