  • 2 c. brown sugar
  • 1 c. granulated sugar
  • 1 egg white
  • 3/4 c. cream
  • 1/8 tsp. soda (baking)

Directions

    Combine sugar, baking soda and cream.

    Cook until the mixture forms a soft ball in cold water (238°).

    Remove from heat and cool until lukewarm.

    Beat until creamy; add unbeaten egg whites and beat until thick enough to spread onto the cake.
