Directions

1Combine sugar, baking soda and cream.

2Cook until the mixture forms a soft ball in cold water (238°).

3Remove from heat and cool until lukewarm.

4Beat until creamy; add unbeaten egg whites and beat until thick enough to spread onto the cake.
