Caramelized Apple Sundaes

  • 2 medium granny smith apples
  • 2 tablespoons butter or 2 tablespoons margarine
  • 1/2 cup packed brown sugar
  • 1/4 cup dried sweetened cranberries, if desired
  • 1/8 teaspoon ground cinnamon
  • 1/4 cup apple juice
  • 1 pint vanilla frozen yogurt (2 cups) or 1 pint ice cream (2 cups)

Directions

    Peel and core apples.

    Cut into thin slices; cut each slice in half crosswise.

    In medium skillet, melt butter over medium heat.

    Add apples; cook 2 minutes, stirring frequently.

    Add brown sugar, cranberries, cinnamon and apple juice; cook 6 to 8 minutes or until apples are tender and sauce is desired consistency, stirring occasionally.

    To serve, spoon frozen yogurt into individual dessert dishes.
