Caramelized Corn With Basil

  • 4 -5 cups fresh corn kernels (from about 12 cobs or 32 oz frozen corn)
  • 4 ounces unsalted butter
  • 12 cup fresh basil, chopped
  • salt & freshly ground black pepper

    NOTE: If using frozen corn it must be thawed and drained on paper toweling for about 30 minutes.

    Use a wide skillet and melt half the butter over high heat.

    Add half the corn and cook, stirring often, until corn is golden and browned, about 10 minutes.

    Stir in half the basil, season with salt and pepper, then transfer to a serving bowl.

    Repeat with remaining ingredients and serve.
