Ingredients

  • 2-1/2 cups Kraft Poppyseed Dressing
  • 1/3 cup frozen orange juice concentrate, thawed
  • 16 cups chopped deli turkey
  • 8-1/2 cups cooked long-grain rice, cooled
  • 6 cups canned black beans, drained, rinsed
  • 5 cups jicama, cut into thin julienne strips
  • 5 cups red peppers, chopped
  • 5 cups mangoes, peeled, finely chopped Whole Foods 2 ea For $4.00 thru 02/09
  • 1-1/4 cups cilantro, finely chopped
  • 3/4 cup jalapeno peppers, seeded, chopped
  • 1-1/4 tsp. ground cumin
  • 40 each flour tortillas (12 inch)

Directions

    Mix dressing and orange juice concentrate until well blended.

    Toss all remaining ingredients except tortillas in large bowl.

    Add dressing mixture; mix lightly.

    For each serving: Spoon 1 cup of the chicken mixture onto each tortilla.

    Fold in sides of tortilla, then roll up tightly from bottom.

    Cut diagonally in half to serve.
