Carmelized Onion Dip

  • 1 large Spanish onion, chopped (about 1-1/2 cups)
  • 4 scallions, white and light green parts only, sliced
  • 2 tablespoons extra virgin olive oil
  • 14 teaspoon salt
  • 14 teaspoon white pepper
  • 1 cup light sour cream
  • 12 cup light mayonnaise
  • 12 cup whipped cream cheese
  • 12 teaspoon garlic powder
  • 12 teaspoon salt

Directions

    In a medium skillet, heat the oil over medium heat.

    Add the onions, scallions, 1/4 t. salt and white pepper.

    Reduce heat to medium-low and cook the onions until they turn a nice golden brown color, stirring frequently, about 20 minutes.

    Remove from the heat and let cool down.

    Meanwhile, combine the sour cream, mayonnaise.

    whipped cream cheese, garlic powder and 1/2 t. salt.

    When onion mixture has cooled, stir into sour cream mixture.

    Cover and refrigerate for a minimum of 2 hours.
