- 1 1/2 c. sugar
- 1 1/2 c. vegetable oil
- 3 eggs
- 2 tsp. vanilla
- 2 c. sifted flour
- 2 tsp. cinnamon
- 1 tsp. baking powder
- 1 tsp. salt
- 2 c. shredded carrots
- 1 c. chopped apples
- 1 c. golden raisins
- 1 c. chopped pecans
Directions

1Combine first 4 ingredients in a large bowl; blend thoroughly. Sift together dry ingredients.

2Add to first mixture and mix well.

3Stir in remaining ingredients.

4Grease and flour rectangular pan.

5Bake at 350° for 35 to 45 minutes until center of cake is firm.

6Cool in pan.

7(If two 9-inch layer pans are used, grease and wax paper line them.

8Cool 10 minutes, then invert.)

9When cool, frost with Pecan Cream Cheese Frosting.
