Ingredients
- 1 1/2 c. all-purpose flour
- 1/2 c. walnuts, chopped
- 1/2 tsp. baking powder
- 1/2 tsp. ground cinnamon
- 3/4 c. vegetable oil
- 1/2 c. brown sugar, packed
- 2 large eggs
- 2 c. sliced carrots
Directions

1Heat oven to 350°.

2Grease a 13 x 9-inch baking pan.

3Line with foil.

4Grease foil.

5In a large bowl, mix flour, walnuts, baking powder and cinnamon.

6In a food processor or blender, process oil, brown sugar and eggs until well blended.

7Add carrots and process until finely chopped.

8Pour over flour mixture and stir until well blended.

9Spread in pan.
-
10Bake 35 minutes or until edges pull away from sides of pan and a pick inserted in center comes out clean. Cool in pan.

11Yield:
